The 2-Ingredient Royal Icing Recipe That Only Works With Real Icing Sugar

Royal icing is deceptively simple — technically just two ingredients — but it only comes out right with genuine UK icing sugar. Here's why, and how to make it.

Royal icing recipe

  1. Whisk 1 large egg white until just frothy (not stiff).
  2. Gradually sift in roughly 250g Silver Spoon Icing Sugar, beating between additions, until the icing is thick, smooth and holds a stiff peak.
  3. Add a few drops of lemon juice for a brighter white and a slightly firmer set.
  4. Adjust consistency with a tiny bit more icing sugar (thicker) or a drop of water (thinner) depending on whether you're piping detail or flooding a surface.

Why it doesn't work the same with US powdered sugar

UK icing sugar is pure, finely milled sugar. American confectioners' sugar usually has a small amount of added cornstarch mixed in as an anti-caking agent — useful for dusting, but it can leave royal icing slightly less smooth and glossy, and can affect how cleanly it sets. For fine piping work especially, the difference shows.
