The One Ingredient Your Flapjacks Are Missing
Share
If your homemade flapjacks come out either too dry or too sickly-sweet, the problem is usually the syrup. Corn syrup is too neutral, honey is too overpowering — the classic British flapjack recipe was built around Lyle's Golden Syrup for a reason.
Classic flapjack recipe
- Melt 125g butter, 100g light brown sugar, and 4 tablespoons of Lyle's Golden Syrup together over low heat until smooth.
- Stir in 250g rolled oats until fully coated.
- Press firmly into a lined 8-inch square tin.
- Bake at 350°F (180°C) for 18-20 minutes until golden at the edges.
- Cool completely in the tin before cutting into bars — cutting too early and it'll fall apart.
Why golden syrup specifically
It's an inverted cane sugar syrup with a caramel note that's milder than molasses and richer than corn syrup — the flavor that makes a flapjack taste like a flapjack rather than a granola bar. There isn't a real US-supermarket equivalent, which is exactly why so many recipes call for it by name.
Where to get it
